I was at work late and I was craving a ramen type soup. So when I got home I looked in the fridge to see what I had to create something as quickly as possible as I was sooo hungry! This is what I came up with and it was so easy and so tasty!! Fit my craving perfectly : )
~ Vegan & Gluten-Free ~
Ingredients:
1/3 cup carrots, chopped
1/3 cup peas, frozen
1/4 cup edamame beans, frozen
1/4 cup onion, chopped
1/4 cup cashews
2tbsp miso paste
2 tbsp coconut cream
3 cups water
70g ramen noodles (I like the millet and quinoa noodles from Costco)
Over medium heat in a medium pot add all ingredients bring to a boil and then simmer stirring occasionally for about 5 minutes or until noodles are cooked. Enjoy!
Prep & Cooking time:
Prep time ~ 3 minutes
Cooking time ~ 7 minutes
Total time ~ 10 minutes

Edamame beans are the immature version of the soy bean. Rich in protein and also high in folate, vitamin K and manganese. Edamame are a complete protein so a great choice when eating mostly vegan or vegetarian diets.
