These are one of my favourite cookie recipes and a go-to when I'm craving a healthy version of a chocolate chip cookie!
~Vegan & Gluten-Free~
Ingredients:
2 1/4 cups almond flour
1/2 tsp cinnamon
pinch salt
1/2 tsp baking soda
1/4 cup coconut oil, melted over low/medium heat
1/4 cup maple syrup
2 tsp vanilla
2 tbsp tahini
1/2 tsp apple cider vinegar
1/4 cup chocolate chips, vegan
1/4 cup dried cranberries, unsweetened
1/4 cup walnuts, chopped
In a large mixing bowl mix flour, cinnamon , salt and baking soda together until well combined. Add wet ingredients together in a small bowl and whisk until evenly combined. Add wet mixture to dry mixture and blend until dough forms. Add chocolate chips, dried cranberries and walnuts, and mix in well until combined. Line a cookie sheet with parchment paper. Using a tea spoon make dough into round balls and press to flatten about 1.5 cm thick.
Bake at 250 F for 30 minutes.
Makes about 12-14 cookies

Another variety known as Bitter Almonds (Wild Almonds) are actually very high in cyanide and can be hazardous to your health so be sure to purchase only the Sweet Almond variety!
