Super easy, delicious and naturally sweet, this is one of my favourite jams!
~Vegan & Gluten-Free~
Ingredients:
12-14 fresh apricots, wash and de-pitted
2 pink lady apples, peeled and de-cored
1 tsp cinnamon
1/2 cup water
2 tsp psyllium
6 dates
In a medium pot place chopped apricots, apples, cinnamon and water. Bring to a boil then simmer until apricots and apples have become soft. pour mixture into a high power blender and add dates and psyllium. Blend on high until smooth. Pour into 2 500ml glass jars and let cool completely before storing in freezer or fridge. Keeps in freezer for up to 3 months. Keeps in fridge for up to 3weeks. Enjoy!
