This gluten-free and loaded with protein breakfast porridge is light and delicious!
~ Vegan & Gluten-Free ~
Ingredients:
1/4 cup quinoa
1/4 cup buckwheat
1/2 cup non dairy milk
1 1/2 cup water
1 tsp cinnamon
1/3 cup raisins
1/3 cup grated apple
1 tsp coconut cream
1/2 banana, sliced
1 tsp sunflower seed butter
In a small pot add water, quinoa, buckwheat and cinnamon and cover with lid. On high heat bring to a boil and then reduce to low heat for a light simmer. Cook covered for about 15 minutes or until liquid has been absorbed. Remove from heat and add raisins and grated apple and stir in well. Return lid and keep covered for another 5 minutes to allow for steam to warm added ingredients. Enjoy as is or add some coconut cream, banana and sunflower seed butter to create a more creamy consistency.
Makes about 2 portions of ~1 cup each
