Apple Cinnamon Rolls

These delicious treats are probably the healthiest and yet super tasty apple cinnamon rolls you will have!! They are very easy to make, so they may be a go-to treat for you : )


~ Vegan ~

apple cinnamon rolls recipe

Ingredients:

2 1/2 cups spelt flour

4 tsp baking powder

1/4 tsp salt

1 1/2 tsp cinnamon

1/2 cup coconut oil, solid

1 tsp vanilla

1 cup coconut or almond milk

1 tbsp coconut oil

1/4 cup raisins

1/2 medium apple, shredded

1/4 cup coconut sugar

2-3 tbsp maple syrup (optional)

Pre-set oven to 375F.


Whisk first 4 ingredients in a medium bowl until well combined. Add solid coconut oil. Cut in with a fork until mixture becomes coarse graduals. Add non dairy milk and vanilla to flour mixture and combine. Mix until dough forms, add a bit more flour if mixture is too wet. Dough should not be sticky. Kneed dough until smooth, about 10-20 times. Form dough into a round ball. Roll out on floured surface into a rectangular shape and to about 1/2 cm thick. Spread 1 tbsp of softened coconut oil thinly and evenly over dough. Sprinkle cinnamon, raisins, coconut sugar and shredded apple evenly over dough. Roll up starting from the far side of dough gently, yet tightly, into a jelly roll shape. Once rolled up, carefully cut 1.5 cm thick slices using a sharp knife and place flat on parchment covered cookie baking sheet. You may need to squeeze the ends of roll slightly if it is separating from the roll.


Bake at 375 for 20 minutes. Remove from oven drizzle with maple syrup (optional) and allow to cool on cooling rack before serving. Enjoy!
