Deliciously simple, light and fresh arugula and beet salad!
~ Vegan & Gluten-Free ~
Ingredients:
4 cups Arugula, washed
2 Celery stalks, washed and diced
1 medium Beet, peeled and grated
2-3 tbsp Lemon tahini dressing
Dressing:
3 tbsp tahini
1/2 lemon, freshly squeezed
1-2 tbsp water (depends on how thick you like your dressing)
1/4 tsp himalayan salt
In a small bowl or measuring cup add all dressing ingredients and mix well with a fork until smooth.
In a large bowl add arugula, diced celery and grated beet. Drizzle with lemon tahini dressing and enjoy!!
Makes 2 medium salads
