Avocado & Egg Salad Sandwich

I wanted to make a healthy egg salad without mayo! Avocado just seemed like a great creamy alternative....it turned out way better than I expected! : )


~ Gluten-Free ~ (if using gluten-free bread)

Avocado and egg salad sandwich

Ingredients:

1 avocado, skin and pit removed *nicely ripe avocados work best

1/2 tsp turmeric powder

1/8 tsp cayenne powder, or to taste

1 tsp lemon juice, freshly squeezed

1 tbsp goddess dressing (see recipe under dressings & sauces)

4 boiled eggs, shelled and mashed

6 pieces of toast, gluten free bread or your favourite whole grain bread

1 tbsp vegan butter (optional) - see recipe under spreads, jams & nut butters

1-2 cups leafy greens, washed

6-8 cherry tomatoes, washed and cut into halves

Salt & pepper to taste

Boil eggs in medium pot for about 10 minutes or until hard boiled. Remove and allow to cool either running each egg under cold water or setting aside to cool. Remove shells and place boiled eggs in medium bowl. Mash eggs with a fork, in a separate bowl mash avocado until smooth and add all other ingredients to bowl. Combine mashed eggs to other ingredients and mix together until well combined. Toast bread and spread vegan butter (if desired) on toast. Place leafy greens on toast and then spread egg salad mix on top of greens. Top with cherry tomatoes and salt & pepper.

Enjoy for breakfast or a delicious lunch!!

Avocados also have high amounts of vitamin E, B vitamins and dietary fibre. They also are an excellent source of potassium and compared to a banana have about 2-3 times the amount. Those individuals with high cholesterol can benefit from eating avocados as the oils found in this wonderful fruit have been shown to help lower unhealthy cholesterol levels.
