Best backcountry energy boosting cookie ever!
~ Vegan & Wheat-Free ~
Ingredients:
1/2 cup Almond butter
1/2 cup Apple sauce
1/4 cup Maple syrup
1 tsp Vanilla
1/2 cup Rolled oats
1/4 cup Almond flour
1/2 cup Ground flaxseeds
1/2 cup Hemp seeds
1/4 cup Cocoa powder
1/2 tsp Cinnamon
1/4 cup Sunflower seeds
1/4 cup Pumpkin seeds
2 tbsp Sesame seeds
2 tbsp Cacao nibs
1/4 cup Raisins or dried cranberries
1/4 cup Coconut flakes
Mix first 4 ingredients together in a medium bowl until well combined. In a separate large bowl add the next 6 ingredients and mix until well combined. Add wet mixture to dry mixture and mix until evenly combined. Add the last 6 ingredients and mix until evenly combined. Lightly grease large muffin tray with coconut oil. Press dough firmly into each muffin cup so it is about half full.
Bake 325F bake for 15 minutes *. Remove from oven and allow to cool for about 5 minutes and then remove from muffin tray and cool completely on a cooling rack. Store in airtight container for about 5 days. Store in fridge for about 10-14 days. Freeze for up to 3 months.
Makes 10-12 large cookie cakes using large muffin tin.
*If using regular muffin trays bake for about 8-10 minutes.
