No flour, no sugar and no oil. These muffins a super healthy snack or treat. They are gluten free and only contain the natural sugars from bananas and blueberries.
~ Gluten-Free ~
Ingredients:
1 cup nut butter (almond, cashew, hazelnut, or peanut)
2 very ripe bananas, mashed
2 organic eggs, beaten
1 tsp cinnamon powder
1 tbsp apple cider vinegar
1 tsp cinnamon
1 tsp vanilla
1 1/2 cups organic blueberries, frozen or raspberries
Preheat oven to 350F.
In a food processor mix together the nut butter, mashed bananas and beaten eggs. Process until mixed well. Add baking powder, apple cider vinegar, cinnamon and vanilla. Blend again until well combined. Pour mixture into a bowl and fold in blueberries. Spoon mixture into greased (with coconut oil) muffin tray.
Bake for 15-20 minutes.
