Beet, lemon grass & quinoa soup

This thick and creamy beet soup is a must try!! I think it is one of my favourites : )

Ingredients:

500g organic beets, peeled and cut into cubes

1 tbs coconut oil

2 shallots, chopped

2 large cloves garlic, peeled and diced

4 cups water

1 organic vegetable bouillon cubes

15g fresh ginger, peeled and diced

1 stalk lemon grass, remove outer leaf layer and diced

1 can (400ml) organic coconut milk

1/2 tsp salt

1/2 tsp pepper

1/2 cup organic quinoa, uncooked

1 cup water

chopped cilantro or parsley

In a large pot bring to a boil 4 cups of water with bouillon cube, salt, pepper, ginger, garlic and chopped beets (cut into about 1 inch cubes) and continue to simmer covered over medium heat until beets are easily skewered with a fork, about 25 minutes. Meanwhile chop shallots and place into a frying pan with coconut oil. Saute over medium heat until onions are translucent. Add to pot of beets along with chopped lemon grass and coconut milk. Simmer for another 15 minutes. Cook quinoa in 1 cup of water bringing to a boil then simmer on low heat until water has been absorbed (about 10-15 minutes) and set aside. Pour beet soup into blender (will need to do 2 batches). Blend until smooth. Pour back into large pot and add cooked quinoa, stir until well combined. If soup is too thick you can add more water until its the consistency you desire. Sprinkle with either cilantro or parsley when serving and enjoy!!!!!!

This lovely root vegetable has amazing health promoting properties you don't want to miss out on!

Beet leaves are also loaded with goodness but I will discuss the beetroot as this is the ingredient used in the above recipe. Beets are very high in folic acid and a great source of dietary fibre, manganese and potassium. They also are a good source of magnesium, phosphorus, iron and vitamin B6. This amazing vegetable has been shown to have health promoting effects on the liver supporting its detoxification process. Anti-cancer properties have been linked to betacyanin, a powerful antioxidant, which is the rich purple-red colour in beets. The dietary fibre content has also been shown to help manage cholesterol levels. There has been protective effects against colon cancer potentially due to the combination of dietary fibre and betacyanin. Don't miss out on beets as they truly are a powerhouse of health boosting nutrients!!!!!
