This creation came over this 2018 Christmas holiday season. I have been wanting to make a beet hummus without chic peas and thought it would be fun to have as an appetizer over the Christmas holidays (partly for the amazing colour). This vegan dip is so delicious and works great with homemade crackers!! (check out my Love & Chew cracker recipe!).
~Vegan & Gluten-Free~
Ingredients:
1 1/2 cups Beets, peeled and chopped into 1 cm cubes
1 400ml can Butter beans
1/4 cup Tahini
1/4 tsp Salt
1/4 cup Olive oil
1 tbsp Garlic, finely chopped
1/2 Lemon, freshly squeezed juice
1/4 cup Italian parsley, coarsely chopped
In a medium frying pan or pot, using a steamer basket steam beets for about 15-20 minutes or until easily skewered with a fork. Place all ingredients except Italian parsley in a food processor and blend until smooth (about 10-12 minutes). Hand mix in chopped Italian parsley. Serve with your favourite crackers or veggie sticks! Store in fridge in airtight container for up to 5 days. Or freeze in airtight container in freezer for up to 1 month.

This wonderfully colourful root vegetable is an excellent source of folic acid and a great source for potassium, manganese and dietary fibre. Vitamin B6, iron and phosphorus are also found in good amounts. Beets have numerous health benefits which includes stimulation of the liver's detoxification processes helping to eliminate unwanted toxins from our body, anticancer properties and provides nutritional support in maintaining healthy bowel function.
