Best Raspberry Jam EVER!!

Love jam but don't love the crazy amounts of sugar in most jams? You HAVE TO try this recipe! No added sugar and it is soooooo delicious!!

Ingredients:

2 cups raspberries fresh or frozen

1/2 cup water

2 tsp ground psyllium

1 tsp vanilla

1/4 tsp cardamom

3/4 cup apple sauce (home made or organic store bought no sugar added)

In a medium sauce pan bring to a boil raspberries and water stirring frequently, then simmer on low heat stirring occasionally for 10 minutes. Once berries are quite soft use a whisk to create a smooth consistency. In a small bowl add ground psyllium and about 1/2 cup of raspberry mixture and blend together well. Use a fork or a whisk to minimize clumps. Add apple sauce, vanilla, cardamom and ground psyllium mixture to raspberry mixture. Whisk until well blended. Mixture should being to thicken quickly. Once well blended, pour into a 500ml glass jar. Allow to cool completely before freezing or refrigerating. Enjoy!!!

Makes about 2 cups

Prep ~ 15 minutes

Cooling ~ 1 hr

Total time ~ 1 hr 15 minutes

They are also a good source of B vitamins, B2, folic acid (B9), niacin(B3), pantothenic acid (B5) and B6. Raspberries have very low sugar content and good dietary fibre which makes them an excellent choice for individuals wanting something to calm their sweet tooth and can feel guilty-free eating these beautiful berries as a dessert!
