Looking for a perfect afternoon tea cake that is super tasty and gluten-free? This is to die for!!
~ Gluten-Free ~
Ingredients:
1 cup almond butter
1/2 cup coconut oil (not melted)
3/4 cup coconut sugar
2 organic eggs
2 tsp vanilla
3/4 cup plain organic yogurt or coconut yogurt
1/4 tsp coconut milk (drinking kind, not the canned) or another plant milk
2 cups gluten-free flour mix
1 tsp baking powder
2 tsp cinnamon
1/4 tsp salt
1/2 cup currants
1/2 cup raisins
1/2 cup chopped pecans (optional)
1/2 cup organic chocolate chips (optional)
Mix nut butter, coconut oil and coconut sugar in a food processor until well combined. Add eggs, vanilla and yogurt to the food processor and blend again until smooth. In a large bowl add flour, baking powder, cinnamon and salt, stir until well combined. Add wet mixture to dry mixture and stir adding coconut milk while stirring. Stir until just combined well. Fold in currants, raisins, pecans and or chocolate chips.
Grease a 9x9inch pan with coconut oil and spread cake mix evenly into pan.
Bake at 365F for approximately 45 minutes or until toothpick or knife comes out clean from the centre of the cake. Let cool for 10 minutes.
