These delicious gluten-free blueberry and buckwheat pancakes will make everyone smile!! : )

Ingredients:
2 tbsp ground flaxseed
4 tbsp water
1 cup buckwheat flour
2 tbsp chia seeds
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1 medium banana, mashed
1 tbsp coconut oil, melted
1 1/2 tsp vanilla
3/4 cup water
Topping options:
Fresh blueberries
Sliced banana
Fresh raspberries
Fresh strawberries
Grated apple
Coconut cream drizzle (optional)
1/3 cup coconut cream
1 tbsp maple syrup
1/2 tsp vanilla
Makes about 6-8 medium sized pancakes
In a small bowl add ground flaxseed and water. Stir until well combined and let sit for at least 10-15 minutes, stirring occasionally. In a large bowl add buckwheat flour, chia seeds, baking powder and cinnamon. Mix well. In a medium bowl. Mash banana until quite smooth, then add melted coconut oil, vanilla and water. Blend well. Add ground flax mixture to banana mixture and blend well. Add wet mixture to dry mixture and stir until just combined. Over medium heat, lightly oil with coconut oil a flat frying pan and use a 1/2 measuring cup to pour pancake mix onto pan. Cook for about 4-5 minutes or until edges look slightly dry and bubbles are developing on top. Flip and cook for another 4-5 minutes. Removed and enjoy with coconut cream drizzle, a touch of maple syrup and/or fresh fruit!
For coconut cream drizzle, add all ingredients into a small mixing bowl and whip together with a whisk until smooth.
Imbedded blueberry pancakes: Place 6-10 blueberries onto pancake once mixture has been poured onto pan. Lightly press each blueberry into mixture and flip as above instructions indicate.

Buckwheat
Buckwheat is gluten free and is actually a seed not a grain as its name can be confusing for people! It is an excellent alternative in baking for people sensitive to flours containing gluten. This wonderful seed contains all eight essential amino acids which therefore makes it an excellent protein source! When selecting a buckwheat flour choose a dark flour instead of light as dark buckwheat flour contains more nutrients since it is ground un-hulled. It is a good source of magnesium, manganese, phosphorus, Vitamin B5 and dietary fibre. A diet which includes regular intake of buckwheat has been shown to lower unhealthy cholesterol levels.
