~ Vegan & Wheat-Free ~
Ingredients:
2 3/4 cup Oats
3/4 cup Shredded coconut, unsweetened
1/2 cup Pumpkin seeds
1/2 cup Raisins
1/2 cup Walnuts
2 tsp Cinnamon
1 cup Buckwheat flour
1 tsp Baking powder
1/2 tsp Salt
1/2 cup Almond butter
1/2 cup Coconut oil
2 tsp Vanilla
1/2 cup Coconut sugar
1/2 cup Coconut milk or almond milk
In a small sauce pan melt together coconut oil, almond butter, coconut sugar and vanilla together. In a large mixing bowl add first 9 ingredients and mix well. Add almond butter mixture to dry ingredients and mix well. Add coconut or almond milk stirring until well combined. Make into about 1.5-2 inch balls and gentle press with a fork. Place on cookie sheet greased with coconut oil. Bake for 12-15 minutes at 375F.
