Deliciously vegan chocolate banana muffins.....a definite crowd pleaser!!!
~Vegan~
Ingredients:
1/4 cup millet flour
3/4 cup brown rice flour
1 1/4 cup spelt flour
3/4 cup cocoa powder
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 cups mashed bananas
1/2 cup maple syrup
3/4 cup avocado oil
1/4 cup coconut cream
1/2 cup water
1 tsp vanilla
1/4 cup coconut sugar
1/2 cup chopped pecans
1/4 cup raisins
Bake at 350F for 30 minutes
Makes 12 muffins
Set oven to 350F.
In a large bowl add first 8 ingredients and mix until evenly combined. In a separate bowl add bananas and mash them until they are creamy and smooth. Add maple syrup and avocado oil and whisk until evenly combined. Then add coconut cream and whisk until mixture is smooth. A water and vanilla whisking again until combined well. Add coconut sugar and whisk to combine well. Add wet mixture to dry mixture and stir until just evenly combine. Add a touch of water if dough seems a bit dry. It should be quite thick but not so thick that it sticks to your spoon and doesn't come off if you tip it to the side. Mix in the chopped pecans and raisins. Lightly grease a muffin tray with coconut oil and spoon mixture evenly into 12 muffin cups. Bake 30 minutes at 350F.
Remove from oven and let them cool for at least 10 minute before removing to a cooling rack.
