Chocolate covered Almond & Sunflower Butter Bliss Balls

These vegan and gluten-free dangerously delicious treats are perfect to make for a special holiday dinner dessert!

Ingredients:

1/2 cup almond butter

1/2 cup sunflower butter

1/2 cup shredded coconut

1 cup dates, soaked

1 tsp vanilla

1/4 cup coconut oil

1/2 cup puffed quinoa

1/4 cup maple syrup

2 tbsp coconut oil

1/2 tsp vanilla

Pinch salt

1/3 cup cocoa powder

2 tbsp coconut milk beverage or almond milk

In a 8-12 cup food processor add soaked dates, nut and seed butter, coconut oil and vanilla. Blend until smooth. Add shredded coconut and blend until well combined. Pour mixture in to a medium bowl and fold in quinoa until evenly combined. Using a table spoon, make 1inch balls and place in baking dish. Place in freezer for 30 minutes or until hard. About 10minutes before removing the balls from the freezer, using a small sauce pan over medium heat, melt coconut oil until just melted. Add maple syrup, vanilla and salt and bring just to simmer then remove from heat. Add cocoa powder and whisk until smooth. Return to a warm element (lowest heat setting). Gradually add non-dairy milk beverage, whisking constantly to combine until chocolate sauce is smooth. Individually roll balls in chocolate sauce until thinly coated. Place chocolate coated balls on tray, spaced 1 inch apart. Return to fridge or freezer to solidify chocolate. Enjoy!


Store in fridge for up to 10 days or in freezer for up to one month.

Grown on the 'Tree of Life', this wonderful fruit is an excellent natural sweetener for baking. It also is loaded with tons of health promoting nutrients (unlike normal white sugar commonly used in baking).
