You can't go wrong with a classic salad like Greek Salad! Try this fresh, delicious amd satisfying salad as a main or a side dish.
Ingredients (ideally organic) :
3 medium tomatoes, chopped
1/2 medium red onion, sliced
1 medium cucumber, chopped
1 cup Kalamata olives, drained
1 medium pepper red or green, chopped
3 mint leaves, finely chopped
2 tsp oregano leaves, finely chopped
2 tsp dill, finely chopped
4 basil leaves, finely chopped
1 tsp thyme, finely chopped
1 green onion, chopped (optional)
3-4 5cmx3cmx1cm Goat feta slices
Dressing:
3 tsp vinegar
1/3 cup extra virgin olive oil
1 tsp dried herbs (blend of oregano, dill, thyme, parsley or something similar)
Pinch salt
Dash of pepper
Mix all chopped veggies and fresh herbs into a large bowl. In a measuring cup add dressing ingredients and whisk vigorously with a fork until well blended. Pour dressing over veggies and herbs in large bowland mix until veggies are covered with dressing well. Place slices of goat feta on top of salad for serving. Enjoy!
Serves 3-5, depending on serving size.
Store in fridge for 2-3 days in air tight container.
