This chewy, delicious, gluten-free, vegan and energy boosting cookie will leave you totally satisfied and happy!

Ingredients:
1 cup almond butter (or another nut butter)
1/3 cup pure maple syrup
1 tsp vanilla
3/4 cup almond or hemp seed milk (see my recipe under beverages)
1 cup hemp seeds
1/2 cup coconut, unsweetened shredded
3/4 cup sorghum flour
1 tsp baking powder
1 tsp cinnamon
1/8 tsp sea salt
1/2 cup raisins
Pre-heat oven on to 375F.
In a large bowl mix together almond butter and coconut sugar until well combined. Add vanilla and almond milk and mix until completely blended. Then add hempseed, shredded coconut, sorghum flour, baking powder, cinnamon and salt. Stir until well combined. Add raisins and mix until evenly distributed in dough. Spoon into small 1.5 inch wide cookies on a lightly oiled (with coconut oil) cookie sheet.
Bake at 375F for 15-18 minutes. Remove from oven and allow to cool for 3-4 minutes then remove from baking tray and cool completely on cooling rack. Store in air tight glass container for up to 5 days or in fridge for up to 2 weeks. Can also be stored in freezer for up to 6 weeks.
