Coconut Turmeric Bars

Inspired from my recent trip to India, these delicious, raw dessert bars are so easy to make they may end up being a go-to for you when you crave for something sweet yet healthy.


~ Vegan & Gluten-Free ~

Coconut turmeric bars


Ingredients:

2 cups finely shredded coconut, unsweetened

1/3 cup honey or 1/4 cup agave syrup (for vegan version)

1 tsp vanilla

1/2 tsp turmeric powder

1/4 cup coconut cream, from can

1/3 cup coconut flour

In a food processor add all ingredients and blend till well combined. Line a bread loaf tin with parchment paper. Pour in mixture and press mixture down evenly and very firmly with your fingers or a large spoon. Place in refrigerator for at least 1 hour. Remove from tin and cut into 1.5 inch squares. Enjoy! Store in fridge for up to 10 days or in freezer for up to 1 month.

Makes ~ 12-15 bars

Prep ~ 20 minutes

Make ~ 60 minutes (in refrigerator)

Total time: 1 hr 20 minutes

Turmeric

This vibrant yellow spice, common in may delicious indian dishes, has numerous health benefits! Turmeric is commonly used in Ayurvedic medicine and traditional Chinese medicine for many different health aliments such as flatulence, menstrual difficulties, bruising, and relief from inflammation. Scientific studies show that curcumin, a component found in turmeric, has very strong anti-inflammatory effects. It has been used for rheumatoid arthritis treatments with very favourable results. Curcumin has also been show to have positive protective effects against colon cancer.
