Every tried soup for breakfast? This is now one of my favourite breakfast creations! Although, it can be enjoyed at any meal! Inspired from my trip to India in November 2019, this deliciously creamy, vegan and totally satisfying soup was a highlight for me during my first meal at the St. Regis Hotel in Mumbai. This is my version of this flavourful yet delicate soup : ) It goes well with Dosa (rice pancakes) which I will post soon too! Enjoy!!
~ Vegan & Gluten-Free ~
Ingredients:
1/4 tsp Coconut oil
¼ cup Purple onion, chopped
2 medium Crimini mushrooms, chopped
¼ cup Carrot, finely chopped
10-12 Fresh curry leaves
1 tbsp Lemon grass, diced
1/2 tsp Fresh ginger, finely diced
¼ tsp Himalayan salt
Dash Freshly ground pepper
pinch of Hing (asafetida) ~ optional
3 cups Water (filtered)
1 cup Shredded coconut, unsweetened
1/3 cup Green beans, chopped
1/3 cup Frozen or fresh peas
Using a high powered blender, add water and shredded coconut. Blend on high for 2-3 minutes until smooth. Set aside.
Saute onion in a medium pot with coconut oil over medium heat. Cook for a few minutes, then add chopped carrot and mushrooms. Add salt and pepper and cook for another few minutes stirring frequently. Add curry leaves, lemon grass and asafetida and simmer on low-medium heat for another few minutes stirring frequently. Add coconut milk and stir to combine. Add chopped beans and peas. Cover with lid and simmer for 5 minutes. Enjoy!
