Are you craving a rich and creamy mac & cheese without the cheese!!??? This creating has been inspired by other plant focused food bloggers with a Love Savour Chew twist : )
~ Vegan & Gluten-Free ~
Ingredients:
340g or about 2 1/2 cups yams, peels and cut into 1 inch cubes
1/2 medium onion, thinly sliced or chopped
3-4 medium crimini mushrooms, thinly sliced
1 tbsp avocado or coconut oil
1 cup coconut cream or coconut milk
2 medium garlic cloves, peeled
1/4 cup cashews
1 cup nutritional yeast
2 tbsp dijon mustard
3 tbsp hemp seeds
1/4 tsp salt
Dash fresh ground pepper
1/4-1/2 cup water
10 oz gluten-free pasta (macaroni, bow tie, or another favourite shape)
1 cup frozen peas or edamame beans
In a medium or large pot, add about 6-8 cups of water and cubed yams and bring to a boil. Reduce heat to medium and gently boil for about 10-15 minutes or until yams are easily skewered with a fork. Meanwhile, in a medium frying pan over medium heat add oil, onions and mushrooms and sauté for 3-4 minutes or until cooked. Set aside. When yams are cooked, using a strainer or ladle with holes, remove all yam cubes from water and place in blender and set aside for a moment. Add pasta to hot yam water and cook on med/high heat until al dente. While pasta is cooking, add coconut cream, garlic, cashews, nutritional yeast, mustard, hemp seeds, salt and pepper, and 1/4 cup of water into the blender with the yams. Blend for about 2-3 minutes or until smooth. Add another 1/4 cup more water if mixture is too thick for blender to mix and blend until smooth. Check the pasta, and two to three minutes before pasta is ready add frozen peas or edamame to the water. Once pasta and peas are ready, drain and rinse using a strainer and return to the pot. Add 'cheese' sauce and sautéed mushrooms and onions to drained pasta. Mix with a ladle until well combined. Enjoy!!

Nutritional Yeast
Yeast is a single cell organism that grows on different foods such as grains or cane sugar and produces a fermentation process when in the right environment. Nutritional yeast is the dried product of yeast that has fermented and dried at a very high temperature killing the active enzymes in yeast. As a nutrient source nutritional yeast contains large amounts of B vitamins, is high in protein (about 8grams in 2 tbsp) and is a good source of zinc. It is important to note that most nutritional yeasts do not naturally contain vitamin B12 (as this depends if it is exposed to Vitamin B12 in the fermentation process) and so will no be a good source for this vitamin unless it has been fortified with B12. This makes it a wonderful nutrient dense addition to sauces and other dishes!
