Looking for a sweet treat loaded with goodness and will give you awesome energy and much, much more??? Try these for a quick 'pick me up' snack or an energy boost on your favourite outdoor adventure! No flour, no dairy, no eggs and super easy to make!!

~ Vegan & Wheat-Free ~

vegan nuts and oats cookie recipe

Ingredients:

1 1/2 cup pitted dates, softened in warm water for 10 minutes

2 cups pecans

1/2 cup hazelnuts

1/2 cup shredded unsweetened coconut

1 cup nut butter (organic peanut butter, almond butter, sunflower butter etc)

1/2 cup coconut milk

1/2 cup organic oats

3 tbsp sesame seeds

1/4 cup sunflower seeds

1/4 cup maple syrup

3 tsp vanilla

2/3 cup chopped organic semi sweet, unsweetened chocolate cocoa nibs (optional)

In a food processor blend together pecans, hazelnuts and coconut until coarsely chopped. Add drained dates and blend again until well combined. Add nut butter, coconut milk, oats, sesame seeds, sunflower seeds, maple syrup, and vanilla. Blend until well combined. Add chocolate chunks and blend until combined. Grease cookie sheet with coconut oil. Make 1 inch balls and flatten with a fork so cookie is about 1.5 cm thick. Place balls about 1-2 inches apart.

Bake for 10-15 minutes at 375F.

Makes about 2 dozen cookies
