Guilt free Nanaimo bars

Do you love Nanaimo bars but don't love the traditional ingredients? Here is my version of a healthy Nanaimo bar the you can enjoy guilt free, but still in moderation of course!

~ Vegan & Gluten-Free ~

Vegan and gluten free Nanaimo bar recipe

Ingredients:

Base:

1 cup pitted dates

3/4 cup shredded unsweetened coconut

2 tbsp coconut oil

1/4 cup maple syrup

2 tbsp coconut flour

1/2 cup organic dark chocolate chips or 1/4 cup cacao

Filling:

3 cups shredded unsweetened coconut

3 tbsp coconut oil

1/4 cup maple syrup

1 cup organic coconut cream

3 tsp pure vanilla

Topping:

1 cup organic dark chocolate chips or bakers chocolate

1 tbsp coconut oil

Base - In a food processor combine all ingredients together until it becomes a dough like consistency (it should stick together easily but not be too sticky). Press down evenly into an 8x8 cake pan lined with wax paper.

Filling - Using a hand mixer mix all ingredients in a medium bowl together on high until smooth or almost smooth. Spread over base layer evenly.

Topping - Over medium heat melt in a sauce pan chocolate chips and coconut oil until just melted. Pour over filling layer evenly and spread lightly so the entire filling layer is covered.


Place pan in freezer for 1/2 an hour. Remove and it is ready to serve or cut into bars for later. Store in refrigerator. Best to serve after warming up to room temperature (about 15-20 minutes).

Makes about 16-18 1.5 inch squares

Freezer time ~ 30 minutes

Total time ~ 60 minutes

Coconuts contain a significant amount of fat, but it is the healthy fat we want in our diet; health-promoting medium-chain saturated fats. Research has shown that coconut oil can increase the body's metabolic rate and it is a great energy source as it is easily absorbed and tends to be directly burned as energy instead of being stored as fat.

Coconuts are also an excellent source of many trace minerals including manganese, molybdenum and copper, and a good source of selenium and zinc.
