Heavenly Carrot & Pecan Loaf

You don't have to feel guilty eating this deliciously satisfying carrot & pecan loaf!


~ Vegan & Gluten-Free ~

carrot and pecan loaf recipe

Ingredients:

2 tbsp ground flaxseed

1 tbsp chia seed

1/2 cup water

1 medium banana, mashed until creamy

1/4 cup avocado oil

1/4 cup maple syrup

12 dates, chopped

1 1/2 cups carrots, grated

1/3 cup pecans, chopped

1/3 cup raisins

1 tsp vanilla

2/3 cup plant milk

2/3 cup teff flour

1/3 cup brown rice flour

1/3 cup light buckwheat flour

1/3 cup shredded coconut

1/2 tsp cardamom

1/2 tsp salt

1 tsp cinnamon

1 1/2 tsp baking powder

1 tsp baking soda

Set oven at 350F

In a small bowl add ground flaxseeds, chia seeds and 1/2 cup water and mix well. Set aside to thicken, stirring occasionally. In a medium mixing bowl, add mashed banana, avocado oil, maple syrup, vanilla and plant milk. Mix with a whisk until well combined. Grate carrots, finely chop dates and coarsely chop pecans. Add thicken flaxseed and chia mixture to wet ingredients mixture and mix well. Add grated carrots, chopped dates, raisins and pecans and mix well to combine. In a large bowl add all dry ingredients, flours, shredded coconut, spices, salt, baking powder and baking soda. Mix well to combine. Add wet mixture to dry mixture and stir until just evenly combined. Lightly grease a loaf tin with avocado oil or coconut oil. Pour mixture into loaf tin and spread around to evenly cover tin. Place a few pecans on top and press lightly into dough. Put loaf into middle rack in oven. Bake at 350F for 60 minutes. A knife should come out clean at 60 minutes when you stick it into the centre of the loaf and remove. Let loaf sit for about 5-10 minutes outside of oven to cool then remove from tin and place on drying rack to cool completely. Store in airtight container once completely cooled for up to 3 days. Will last a few days longer if stored in fridge. Enjoy in moderation!!! : )
