Lava Lake Cookies

These delicious thumb print inspired cookies are so tasty you would never guess they are a healthy treat!! Enjoy in moderation : )


~ Vegan ~

lava lake cookies recipe

Ingredients:

3/4 cup plus 1 tbsp coconut oil, softened (room temperature)

1/3 cup coconut sugar

1 tsp vanilla

1/3 cup tapioca flour

1 1/2 cup spelt flour

Pinch salt

1/2 tsp cinnamon

1/2 tsp baking powder

1/3 walnuts, chopped

1/4-1/3cup coconut milk or almond milk

1/2 cup raspberry jam (see my recipe )

1 tbsp cinnamon

2 tbsp shredded coconut

Pre-set oven to 375F.

~If making homemade raspberry jam (see my recipe), make it first.

Whisk together softened coconut oil, coconut sugar and vanilla in a medium bowl until well combined. In a separate bowl add flours, salt, cinnamon and baking powder together and mix well. Add wet mixture to dry mixture and mix well, gradually add non dairy milk until dough sticks together but is not sticky. Dough should hold together well. Add a bit more spelt flour if it is too wet.


Using a table spoon to measure, scoop out dough to make round 1- 1.5 inch balls with your hands and press thumb into centre to make a depression for the jam. Place cookies on a baking sheet lightly greased with coconut oil. Fill depression with raspberry jam in each cookie. Bake at 375 for 18 minutes. Sprinkle with cinnamon and shredded coconut. Allow cookies to cool before serving.

Makes about 20-24 cookies

Prep & Bake time:

Prep time ~ 25 minutes, plus 15 minutes if making homemade jam

Baking time ~ 18 minutes

Total time ~ 45 minutes total

Spelt

This grain is an excellent alternative for those sensitive to wheat. Spelt does contain gluten, though the gluten found in all cereal grains does differ quite a bit. The gluten found in spelt is more fragile in molecular composition compared to the gluten found in wheat and is therefore much more easily digested. Spelt is the only grain that contains a carbohydrate known as glycosaminoglycans which has been found to help lower cholesterol, normalize blood clotting and also stimulate the immune system. Also, with its high levels of complex carbohydrates, immune-stimulating effects and having double the protein and dietary fibre compared to common commercial wheat varieties, this wonderful spelt grain is an excellent choice for athletes looking to boost there carbohydrate intake.
