These vegan and wheat-free muffins are perfectly sweet and so light and fluffy. They make an excellent light breakfast, mid day or afternoon snack!
~ Vegan ~
Ingredients:
2 tbsp ground flaxseed
1/4 cup water
1 cup grated carrots
1 cup spelt flour
1/2 cup teff flour
1 1/2 tsp cinnamon
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp sea salt
1/4 cup avocado oil
1/4 cup agave syrup or maple syrup
1 tsp vanilla
1/3 cup coconut yogurt or 1/3 cup apple sauce
1/4 cup plant milk (see plant milk recipes oat & almond milk or hemp milk)
1/4 cup raisins
1/4 cup chopped walnuts (topping)
2-3 tbsp maple syrup (topping)
Set oven to 350F.
In a small bowl add ground flaxseed and water, stir until well combined and let sit to thicken (after a few minutes stir once or twice to re-blend). Peel and then grate carrots and set aside. In a large mixing bowl add flours, salt, cinnamon, baking soda and baking powder and stir until well combined. In a separate bowl add avocado oil, agave syrup (or maple syrup) and vanilla and whisk together well. Then add coconut yogurt (or apple sauce) and plant milk. Whisk until well combined. Add thickened ground flaxseed mixture to wet mixture and mix until well combined. Add wet mixture to dry mixture and stir until just combine. Add carrots and raisins to mixture and stir until evenly combined. Using coconut oil or avocado oil lightly grease muffin trays*. Using a large spoon, fill muffin cups to 90% full. Sprinkle with chopped walnuts and drizzle with maple syrup (about 1/4 -1/2 tsp each muffin). Bake for 30** minutes. Remove from oven and allow to cool for 5-10 minutes. Then carefully remove from muffin tray and place on cool rack to cool completely. Store in airtight container for 3-4 days. Will last an extra few days longer if stored in fridge. Enjoy!
