I love these bars for an adventure day in the mountains whether on your feet, on a bike or on your skis or snowboard, these bars will give you the perfect boost of energy to help get you to your final destination!

Ingredients:
1 cup Pumpkinseeds plus extra ~1/4 cup for topping
1/2 cup Hemp seeds
1 cup Buckwheat flour
1 tsp Cinnamon
1/2 tsp Cardamom
pinch Himalayan sea salt
1 1/2 cup Dates, soaked in warm water for about 10 minutes
2 tbsp Apple sauce (home made or store bought)
1 1/2 tsp Vanilla
In a large food processor add first 6 ingredients and blend until seeds are finely ground. Drain soaked dates and add to processor along with apple sauce and vanilla. Blend again until dates are well combined. You may need to stop the food processor periodically to press down sides if dough builds up during blending. Once dough looks quite smooth and consistently blended place onto 9x9 inch baking pan lined with parchment paper. Press down dough evenly and firmly into pan. Once evenly distributed sprinkle pumpkinseeds on top and press down firmly so the seeds are stuck into dough. Press down a piece of parchment paper overtop of bars and place in freezer for at least 2 hours. Remove and cut into bars. Store in airtight container in fridge or freezer for up to 4-6 weeks.

Total time: 2.5 hours
Makes about 16 -18 bars
