Granola is one of the most fun and easy creations to play around with in the kitchen. It can be easily altered by your own personal and creative touch!

~ Vegan ~
Ingredients:
2 cups Organic oats
1 cup Buckwheat
1 cup Pumpkin seeds
1 cup Pecans, chopped
1 cup Almonds, chopped or sliced
1 cup Goji berries
1 cup Organic raisins
3-4 tsp Cinnamon
1-2 tsp Nutmeg
1-2 tsp Cloves
1-2 tsp Cardamum
1 1/2 cups Honey
1/2 cup Coconut oil
Pre-heat oven to 325 degrees F.
Mix in a large bowl all ingredients except for goji berries, raisins, honey and coconut oil. In a sauce pan on med-low heat melt coconut oil and honey together. Once melted pour into large bowl with other ingredients and stir until all dry ingredients look moist. Spread out in large roasting pan or casserole dish or cookie sheet. Leave in oven for 20-25 minutes, stir 1-2 times. It should look lightly golden brown. DO NOT OVER COOK!! Add raisins and goji berries after granola has been removed from the oven. Mix well and let sit till completely cooled before storing in air tight container. Granola should maintain freshness for about 3 weeks in an airtight container or in the fridge for up to 8 weeks.
Enjoy a serving with fresh organic fruit and organic plain yogurt or coconut yogurt. For extra protein and omega 3 fats add 1 tablespoon of almond butter.
