No-Bake Oat & Almond Cookie

Looking for a super easy and quick cookie recipe? This one is so delicious and satisfying it may surprise those vegan skeptics! : )

No bake oat & almond cookie

Ingredients:


1 1/2 cups oats

10 dates, soft (if hard, pre-chop into small chunks)

3/4 cup almond butter

1 tsp vanilla

1 tsp cinnamon

1/4 cup apple sauce

Pinch salt

2 tbsp Cocoa powder or carob powder

1 tsp vanilla

2 tbsp maple syrup

1 tbsp melted coconut oil

In a food processor add oats, salt and cinnamon and blend for a few minutes until oats are coarsely processed, then add dates and almond butter and blend until well combined and forming a dough like texture. Add vanilla and apple sauce and blend until dough becomes a bit sticky. On a cookie sheet, using a table spoon make about 1 inch balls and press down into a cookie shape. Place in freezer to cool and harden. Meanwhile, in a small frying pan, over medium heat, melt coconut oil until just melted then add maple syrup and whisk until well combined and mixture just starts to form tiny bubbles. Remove from heat, add vanilla and whisk until combine. Then add cocoa or carob powder and whisk until smooth. Remove cookie sheet from fridge and drizzle chocolate sauce over cookies using a spoon**. Place cookie sheet back in freezer to cool completely, for about 45 minutes. Enjoy in moderation! Store in a glass airtight container in the fridge for up to 2 weeks or in the freezer for up to 4 weeks.

**If you have left over chocolate sauce, save it in a glass jar for adding a touch to an oatmeal breakfast or to a chia pudding treat!
