~ Vegan ~
Ingredients:
1 cup walnuts or pecans
1 cup almonds
1 1/2 cup oats
1/2 cup pumpkin seeds
2/3 cup unsweetened shredded coconut
3 tbsp organic nut butter (almond, cashew, peanut, sunflower etc)
1 tbsp coconut oil
1 tsp vanilla
3 tsp cinnamon
3 apples, sliced thinly (choose a sweet not tart variety)
1 1/2 cups blueberries
In a food processor add all nuts, pumpkin seeds, and coconut and process until small chunks or coarsely ground. Add oats and blend, then add nut butter, coconut oil, vanilla and 2 tsp of cinnamon and process again until well combined and will stick together if you pinch the mixture with your fingers.
In either a round casserole dish or a 9x9 square baking pan spread the thinly sliced apples and blueberries (or other fruit such as plums, peaches, or other berries) evenly, sprinkle with 1 tsp of cinnamon and then cover with the nut crumble mixture.
Bake at 350F for approximately 45 minutes or until apples are soft.
