Ingredients:
1 mashed ripe banana
1/2 cup almond butter
1/4 cup maple syrup
1 tsp vanilla
2 cups organic oats
1/2 cup ground flaxseeds
1 tsp cinnamon
8 dried figs, chopped (with stem end removed)
In a large bowl whisk together first four ingredients until smooth. Add oats, ground flaxseed and cinnamon to the wet mixture and stir until well combined. Add chopped figs at the end and stir until evenly distributed. Lightly grease cookie sheet with coconut oil and make round 1-2 inch balls with dough and lightly press down with fork.
Bake at 375F for 10-12 minutes
Makes about 12-16 cookies
