Oats & Fig Cookies

Looking for a healthy yet super tasty cookie to serve friend or your family? These will be a crowd pleaser : )

oat and fig cookie recipe

Ingredients:

1 mashed ripe banana

1/2 cup almond butter

1/4 cup maple syrup

1 tsp vanilla

2 cups organic oats

1/2 cup ground flaxseeds

1 tsp cinnamon

8 dried figs, chopped (with stem end removed)

In a large bowl whisk together first four ingredients until smooth. Add oats, ground flaxseed and cinnamon to the wet mixture and stir until well combined. Add chopped figs at the end and stir until evenly distributed. Lightly grease cookie sheet with coconut oil and make round 1-2 inch balls with dough and lightly press down with fork.

Bake at 375F for 10-12 minutes

Makes about 12-16 cookies

Prep time ~ 15 minutes

Baking time ~ 12 minutes

Total time ~ 27 minutes

Figs are an excellent dried fruit choice for adding a bit of sweetness to a dessert or treat. This fabulous fruit has been shown to help control blood pressure. Also, being alkaline in nature they help support a healthy pH level in the body. Figs are high in dietary fibre and rich in potassium, calcium, magnesium, iron, copper and manganese. Although rich in nutrients they are also high in natural sugars as are most fruits and dried fruits and berries, so eating in moderation as a treat is always wise!
