Opening Day Carob Chip Buckwheat Cookies

This cookie is great for packing with you on an adventure day like when your local ski hill opens for first day of the season! It will give you energy and a bit of sweetness to keep you going on the hill. Or it is also a perfect treat to calm your sweet tooth!

Carob cookie recipe

Ingredients:

3/4 cups buckwheat flour (dark)

1/2 cups spelt flour

1/2 tsp baking soda

1/4 tsp salt

3/4 cup cashew butter or another nut or seed butter

1/3 cup maple syrup

1 tsp vanilla

1/4 cup coconut milk (not from can) or almond milk

1/4 cup carob chips or cacao nibs

1/4 cup raisins (optional)

In a medium bowl mix cashew butter, maple syrup, coconut milk and vanilla together until well combined. In a separate larger bowl blend buckwheat flour, spelt flour, baking soda and salt together. Add wet mixture to dry mixture and mix until well combined. Add carob chips and raisins if desired and mix until evenly distributed. Grease cookie sheet lightly with coconut oil. Make about 1.5 inch round balls and press down with fork. Bake at 375F for about 10-12 minutes. Do not over bake!!

These cookies are great if you store them in the fridge or freezer and just grab one as a treat. This way they may last longer...as they are out of sight!

Makes about 12-16 cookies

Baking time ~12 minutes

Total time ~ 27 minutes

Carob chips

Carob chips are made from carob powder which comes from ground fruit pods from the carob tree. It is naturally sweet and is an excellent replacement for chocolate. It is also caffeine free! Carob has been shown to have many health benefits such as assisting with lowering high cholesterol, managing blood sugar levels, and helps with weight management. It is high in dietary fibre and contains powerful nutrients from potassium, calcium, magnesium, phosphorus, iron, copper, zinc and manganese!
