Pecan & Fig Energy Ball Bites

So easy to make and great for a quick energy boosting bite!


~ Vegan & Gluten-Free ~

Oat and nut ball recipe

Ingredients:

2 bananas, mashed

1 tbsp maple syrup

3 tbsp almond butter

1 tsp vanilla

1 cup buckwheat flour

1/2 cup coconut, shredded

1/2 cup oats

1/2 cup pumpkin seeds, ground

1/2 cup figs or dates, chopped

1 cup pecans, chopped

Mix first 4 ingredients together in a medium bowl until smooth and creamy. In a large bowl add next 6 ingredients and mix until evenly combined. Add wet mixture to dry mixture and stir until well combined and dough sticks together well. Make into 1-1.5 inch balls and place evenly spaced on baking sheet greased with coconut oil. Bake for 10-15 minutes at 350F. Enjoy within 5 days or store in fridge in air tight container for up to 2 weeks. These cookies also store well in the freezer in an air tight container for up to 8 weeks.

Makes about 24 balls

Total time: ~ 30 minutes
