These fritters are a perfect addition to a breakfast meal or on their own as a light snack!

Ingredients:
1 cup Yam (orange sweet potato), grated
1 cup Potato, grated
1 tsp Garlic, finely chopped
¼ cup Onion, finely chopped
1 tsp Thyme, dried or fresh
¼ tsp Himalayan salt
¼ tsp Chilli pepper flakes
2 tbsp Ground flaxseed
¼ cup Water
2 tbsp Wheat-free flour (buckwheat, spelt, brown rice or quinoa flour)
1-2 tbsp Coconut oil or avocado oil
In a small bowl add ground flaxseed and water, mix well to combine and set aside. In a large bowl add grated yam, potato, chopped onion and garlic. Mix to combine evenly. Add thyme, salt and chilli pepper flakes to the potato and yam mix and mix well to combine. Add thickened ground flaxseed mixture to potato mixture and mix until evenly blended. Add flour and mix until well combined. Add coconut or avocado oil to a large frying pan and warm over medium heat. As pan is warming up, make about 6 medium patties 3/4 of a centimetre thick and place on warmed pan. Lightly cook patties for about 3-4 minutes on each side until light golden brown. Garnish with parsley and green onion. Enjoy!
Store in airtight glass container in the fridge for up to 5 days or in the freezer for about 4 weeks.

Yam (orange sweet potato)
The yam is actually the orange variety of the sweet potato. In our common grocery store it is called a 'yam' to distinguish it from the white flesh sweet potato variety.
