Looking for amazingly tasty gluten free and not overly sweet vegan muffins? Try these delicious carrot, pecan & raisin muffins.They are great as a snack or for breakfast on the go!
~ Vegan & Gluten-Free ~
Ingredients:
1 3/4 cup gluten free flour
1/4 cup ground flaxseed
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp salt
3 tbsp ground flaxseed
7 tbsp water
1/4 cup grape seed oil
1/2 cup maple syrup
1 1/2 cups grated carrots
1 cup coconut or almond milk
1/2 cup raisins
3/4 cup chopped pecans
1/4 cup pumpkin seeds
Combine first 8 ingredients in a medium bowl. Mix the 3 tablespoons of ground flaxseed and 7 tablespoons of water in a small bowl until well combined and let sit for about 10 minutes. Grease muffin tray with grape seed oil or coconut oil. Grate 1 1/2 cups of carrots (about 3 large carrots), chop 3/4 cup of pecans and set aside. Once ground flax/water mixture has thicken pour into large bowl and add oil and maple syrup. Mix well with a whisk. Then add coconut or almond milk and whisk until all ingredients are completely blended together. Add carrots, raisins and pecans to wet mixture and stir till just combined. Add dry ingredients to wet mixture and stir until dry mixture is just blended in. Spoon into oiled muffin tray. Sprinkle with pumpkin seeds.
Bake at 350F for about 15-20 minutes.
Makes about 12 muffins
