Ingredients:
1/4 cup red lentils, rinsed
1/4 cup quinoa
1/4 cup steel cut oats
1 3/4 cup water
1 tsp cinnamon
1 banana, sliced
1/2 cup fresh raspberries or thawed to room temperature frozen raspberries
1-2 tbsp coconut cream (from a can)
1-2 tbsp pure maple syrup (optional)
Pour all ingredients into a medium pot and bring to a boil over high heat. Reduce heat to low cover with a lid and simmer for about 20 minutes, stirring occasionally. Dress up with fresh or thawed frozen raspberries, sliced banana and a drizzle of coconut cream. A touch of pure maple syrup can be added for an extra touch of sweetness if desired : )
