Power 'Brownie' Energy Bar

These are sooooooooo GOOD!!! I have to keep them in the freezer so I don't eat them too quickly! These make the perfect pick-me-up either during a busy, active work day or on a beautiful outdoor adventure somewhere!

Ingredients:

1 1/2 cups Dates, soaked in warm water for about 10 minutes then drained

1/2 cup Rolled oats

1 cup Hemp seeds

1/3 cup Pumpkin seeds

1 cup Shredded coconut

1/2 cup Ground pumpkin seeds, you can grind whole seeds in a coffee or seed grinder

1/2 cup Green super food powder (choose one with a Spirulina, chlorella blend)

1/2 cup Cocoa powder or carob powder

1/4 cup Sunflower butter or another nut butter

1/4 cup Apple sauce home made (see my 'Crazy easy apple sauce' recipe) or store bought

1 1/2 tsp Vanilla

In a food processor, add rolled oats, hemp seeds, pumpkin seeds, shredded coconut and ground pumpkin seeds. Blend until all ingredients are coarsely ground. Add soaked and drained dates. Blend again until dates are well combined. Add green super food powder, cocoa or carob powder, seed or nut butter, apple sauce and vanilla. Blend again until well combined. You may need to stop the processor and scrap down the sides a few times until everything is well blended. Line a 9x9inch baking pan with parchment paper and pour mixture into pan. Spread mixture evenly and press down firmly. Place in freezer for 2-3 hours. Remove and cut into bars. Store in air tight container in fridge for up to 3 weeks or in freezer for up to 3 months.

Makes: about 12-16 bars

Prep & chill time:

Prep ~ 30 minutes

Chill ~ 2-3 hours

Total ~ 2.5 -3.5 hours
