This tasty vegan and gluten free energy bar is perfect as an afternoon tea treat or an energy boosting snack during an outdoor adventure!

Ingredients:
1 cup pumpkin seeds, ground (use a coffee bean grinder or seed grinder)
2/3 cup hemp seeds
1/3 cup coconut flour
2 medium bananas, mashed
1/3 cup ground flaxseeds
2 tsp vanilla
1/4 cup sliced almonds
Pre heat oven to 350F.
In a medium bowl mash bananas until smooth, then add ground flaxseeds and vanilla. Mix well until thoroughly combined. Let sit for about 5-10 minutes.
In a large bowl add ground pumpkin seeds, hemp seeds and coconut flour. Mix until well combined. Add wet mixture to dry mixture and mix well until a dough like consistency forms. Line a loaf tin with parchment paper. Pour dough into tin and press down firmly. Mixture should be about 1 inch thick. Press almond slices evenly into top of dough. Bake for about 15-20 minutes. Edges should turn lightly golden brown. Remove from oven and let cool for 5 minutes then remove from tin completely and let cool completely before cutting into bars or squares. Enjoy within 3-5 days or keep in fridge in airtight container for up to 10 days. Can also be stored in freezer in air tight container for up to 2 months.
