Quinoa Breakfast, lunch or dinner Cakes

These Quinoa cakes are amazing for any meal of the day!!


~ Gluten-Free ~

Gluten-free fritters recipe

Ingredients:

I cup cooked quinoa (about 1/3 cup uncooked quinoa in 2/3 water)

1/2 cup brown mushrooms, finely chopped

1 green onion, chopped

2 eggs

1/4 cup Italian parsley, chopped

1 tbsp grape seed oil

1/4 tsp ground oregano

pinch Salt & Pepper

sauce:

1/4-1/2 of one avocado (if small use 1/2, is medium to large size use 1/4)

1/2 tbsp freshly squeezed lemon juice

1 tbsp tahini

1 tbsp olive oil

pinch Salt

Cook quinoa and set aside to cool. Chop washed mushrooms, parsley and green onion. In a medium bowl whisk eggs and add salt, pepper and ground oregano. Add 1 cup of cooled cooked quinoa and all chopped veggies to whisked eggs. Mix well until eggs seem to be well integrated. Warm up frying pan with grape seed oil over medium heat. Using a measuring cup, scoop about 1/2 cup - 3/4 cup of mixture and shape into a pancake. Cook for about 3 minutes then flip over and cook for another 2-3 minutes.

For sauce:

In a small bowl mash a 1/4 of a soft avocado until creamy, then add the lemon juice and whisk together. Add tahini, olive oil and a pinch of salt. Whisk well until smooth. Serve on top of quinoa cakes.

Additional toppings:

Sliced avocado

A few pieces of Italian parsley

Makes about 4 cakes, about 2 servings

Prep and cooking time:

Prep time ~20 minutes

Cooking time ~ 10 minutes

Total time ~ 30 minutes

This powerhouse seed is something you should consider having on a regular basis because its so loaded with goodness you just don't want to miss out!!! It's also a great alternative for gluten sensitive people as it is gluten free. This amazing seed contains all 20 amino acids (this is rare!!) so is an excellent protein source!!! It is also a great source of magnesium, manganese, phosphorus, copper, iron, zinc, thiamine, folic acid and is a good source of potassium, selenium, vitamin B6 and vitamin E. This incredible seed has been shown to help with weight loss as its high protein content helps to increase the feeling of fullness after a meal. There is also some research that shows this little seed may influence the hormones affecting appetite.
