It has taken me FOREVER to figure out a deliciously light and tasty banana bread. This one is definitely my best one so far : )
~ Vegan (option) ~
Ingredients:
1/3 cup grape seed oil
1/3 cup honey, softened or just melted (if not runny already)
2 1/2 medium very ripe bananas (extra 1/2 can be used for chunks of banana to mix in later)
2 eggs or *2 tbsp ground flaxseed and 1/3 cup water (vegan option)
* for vegan option, in a small bowl mix ground flaxseed and water together and let sit for about 10 minutes until thick (substitutes eggs)
1/4 cup almond milk or other non-dairy milk
1 tsp vanilla
1cup spelt flour
1/2 cup dark buckwheat flour
1/4 cup ground flaxseeds
1 1/2 tsp cinnamon plus another 1-2 tsp for topping
1 tsp baking soda
1/4 cup raisins or chocolate chips
optional
1/4 cup chopped pecans or dates
1/2 banana, cut into chunks
In a large bowl add melted honey and grape seed oil and whisk until well blended. In a separate bowl mash bananas until creamy and add to oil and honey, blending well. Add eggs or ground flax mixture and blend well. Add non-dairy milk and whisk until well combined. Add baking soda, vanilla, salt and cinnamon and whisk until well combined. Then add spelt flour, buckwheat flour and ground flaxseed and stir until just combined. Fold in raisins and/or chocolate chips and any of the optional ingredients of your choice.
Grease loaf tin with coconut oil. Pour mixture into loaf tin and spread around evenly. Sprinkle 1-2 tsp of cinnamon evenly over mixture.
Bake at 325F for 55-60 minutes.
Let cool for 10 minutes in tin, then remove and let cool on cooling rack for another 20 minutes.
