Rosemary & Pumpkinseed Crackers

Tired of spending tons of $$$ on fancy crackers? These are delicious and so easy to make!


~Vegan~

homemade Pumpkinseed crackers

Ingredients:

3/4 cup spelt flour

1/2 cup sunflower seeds

1/2 cup hemp seeds

1/2 cup pumpkin seeds

1/4 cup raisins

1 1/2 tsp freshly, chopped rosemary

1/4 tsp salt

1/2 cup water

In a medium bowel add all dry ingredients and mix well. Add water and mix with hands. Squeeze mixture together with hands to combine and bind together. Dough should somewhat stick together. On a baking sheet lined with parchment paper pour dough into middle. Being to firmly press down mixture with wet fingers, gradually compressing towards the edges. As the mixture flattens you will need to being pressing down more firmly to bond all of the ingredients together. Work this process for at least 5 minutes. If you don't spend the time compressing the mixture firmly, your crackers may end up like a savoury crumble!! Use one hand to support the edge as you press down around outer edges of the mixture. The middle tends to be thicker so if you press down firmly working from the centre to the outer edges gradually, this will help to make the thickness of your cracker more even. You will have to periodically wet your fingers to keep the mixture from sticking to your hands, so having a small bowl of water on hand helps. Try to firmly press the mixture down to about 5-7.5 mm thick. Bake at 325F for 30 minutes, then remove and cut into squares. Flip over squares and place back in oven to cook for another 30 minutes. Remove from oven and place crackers onto completely cooling rack. Enjoy!!

Makes 20-24 1.5-2 "x 1.5-2" crackers

Baking time ~ 1 hour

Total time ~1.5 hours
