Shred Summer Salad

A perfect salad for summer! Fresh, light and delicious!


~Vegan & Gluten-Free~

kohlrabi and carrot salad recipe

Ingredients:

3 medium Carrots, coarsely shredded

5 Radishes, finely chopped into strips

6 medium Kale leaves, de-stemmed and finely chopped

1 medium Kohlrabi, finely sliced into strips

1/2 Lemon, freshly squeezed juice

pinch salt

1/4 cup Pumpkin seeds

1/4 cup Sunflower seeds

1/4 cup Sesame seeds

Dressing:

2 tsp Tamari

3 tbsp Olive oil

1/4 cup Water

2 inch cube Fresh ginger, peeled

1 1/2 tsp Honey

1/2 tsp Chilli flakes

1 small Shallot, finely chopped

Prep veggies as above. In a small bowl add kale leaves, fresh lemon juice and pinch of salt. Massage to mix in juice and salt. Set aside. In a blender add first 6 ingredients and blend until smooth. Add finely chopped shallots and blend on low speed to mix. In a large bowl add all veggies and seeds mixing well until evenly combined. Serve with dressing on the side or mix into salad and serve.

Makes 4-6 side salads or 2-3 large salad portions

Prep ~ 30 minutes

Make ~ 5 minutes

Total Time ~ 35 minutes

A member of the cabbage family and also known as the German Turnip, this wonderful vegetable is high in many health promoting nutrients such as vitamin C, vitamin B6 and potassium. Research has shown cancer fighting properties in phytonutrients found in Kohlrabi as well as benefits in reducing risk of heart disease and Diabetes.
