A perfect salad for summer! Fresh, light and delicious!

Ingredients:
3 medium Carrots, coarsely shredded
5 Radishes, finely chopped into strips
6 medium Kale leaves, de-stemmed and finely chopped
1 medium Kohlrabi, finely sliced into strips
1/2 Lemon, freshly squeezed juice
pinch salt
1/4 cup Pumpkin seeds
1/4 cup Sunflower seeds
1/4 cup Sesame seeds
Dressing:
2 tsp Tamari
3 tbsp Olive oil
1/4 cup Water
2 inch cube Fresh ginger, peeled
1 1/2 tsp Honey
1/2 tsp Chilli flakes
1 small Shallot, finely chopped
Prep veggies as above. In a small bowl add kale leaves, fresh lemon juice and pinch of salt. Massage to mix in juice and salt. Set aside. In a blender add first 6 ingredients and blend until smooth. Add finely chopped shallots and blend on low speed to mix. In a large bowl add all veggies and seeds mixing well until evenly combined. Serve with dressing on the side or mix into salad and serve.
Makes 4-6 side salads or 2-3 large salad portions
