Soba noodle stir fry

If you have never tried soba noodles, now is the time!


~ Vegan ~

Soba noodle stir fry

Ingredients:

1/2 package soba noodles

1 cup red cabbage, chopped

1/2 medium yellow onion, chopped

1 cup broccoli, chopped

1 cup kale, chopped

2 green onions, diced

2 tbsp avocado oil or coconut oil

sauce:

1/4 cup nutritional yeast

2 tbsp tamari

1/3 cup water

1/3 cup olive oil

3 cloves garlic

1/2 tsp salt

Cook soba noodles and set aside. In a blender add all sauce ingredients and blend until smooth. Set aside. Lightly fry onions in avocado oil or coconut oil until slightly translucent over medium heat. Add cabbage and broccoli and cook until broccoli turns bright green and is slightly soft (do not over cook!!). Add soba noodles and kale. Cook for a few minutes until kale is softened. Add sauce and mix until well combined. Garnish with green onions.

Serves 2

Prep time ~ 10 minutes

Cooking time ~ 20 minutes

Total time ~ 30 minutes

Skin problems can be a sign your liver needs help, so if you are suffering from skin issues increase your cruciferous vegetable intake!

So don't be shy to eat your cruciferous vegetables in abundance!!!! Your liver will love you for it : )
