Deliciously vegan black rice noodle dish with a Thai flare!!
~ Vegan & Gluten-Free ~
Ingredients:
1 small yellow onion, diced
1 1/2 cups tofu, cut into 1 cm cubes
4 cups crimini mushrooms, washed and chopped
1 medium carrot, julienned
2 large celery sticks, diced
1/2 lime, freshly squeezed
1 tsp garlic powder
1 tsp paprika
1/4 tsp Himalayan salt
2 tbsp grape seed oil
227g Pad thai noodles
Sauce:
3 tbsp almond butter
2 tbsp tamarind paste
2 tsp tamari
1 tbsp maple syrup
1/4 tsp chilli flakes (add more if you like things spicy!!)
1/4 cup water
Garnish:
Cilantro, chopped
Sliced almonds
Sesame seeds
Slice of lime
Boil 2-3 litres of water for the noodles and cook as directed on package. Once cooked, drain and rinse. Set aside. In a small bowl add garlic powder, paprika and a dash of Himalayan salt and mix well. Add cubed tofu and mix until cubes are coated with seasoning. In a large wok over medium/high heat add oil and tofu and stir frequently to avoid burning the tofu. Once tofu looks light brown, add onions and sauté until translucent. Reduce to low/medium heat and add mushrooms, carrots, celery and 2-3 tbsp of water. Stir frequently. In a small bowl add all sauce ingredients and stir until well combined. Add noodles to wok and mix in. Turn off stove and add sauce. Mix well. Squeeze juice of 1/2 of a lime and mix in well. Serve in bowls and garnish with cilantro, sesame seeds, sliced almonds and a slice of lime. Enjoy!!

Crimini Mushrooms
As part of the button mushroom family and also the 'baby' version of portobello mushrooms, crimini mushrooms are an excellent source for selenium, zinc, potassium, copper, Vitamin B1 (thiamine), B2 (riboflavin), B3 (Niacin), and B5 (pantothenic acid).
