This is a super easy spinach gommae recipe that has simple ingredients and is not loaded with sugar!

Ingredients:
1 bunch of organic spinach or one bag
Sauce:
1 1/2 tbsp sesame seeds
2 tbsp tahini
1/4 cup water
1 tsp tamari
2 tsp honey
pinch salt
Wash spinach well, no need to de-stem the leaves unless they look like they need to go! Blanch or steam spinach until just wilted. Rinse under cold water in a strainer. Squeeze out any excess water. Place in medium bowl and set aside.
To make sauce, first roast sesame seeds until lightly golden in a frying pan over medium heat. Stir frequently to avoid burning. Place roasted seeds into a mortar and pestle (if you have one, if not lightly grind in a coffee grinder) and grind until half of the seeds are broken down. In a bowl add tahini, water, tamari, honey and ground sesame seeds. Mix until well combined. Add salt to taste.
Add sauce to cooked spinach and stir until spinach is well coated in the sauce.
