Super Green Arugula & Pea Salad

Beautifully green and deliciously satisfying, this salad is a perfect light meal or side dish!


~ Vegan & Gluten-Free ~

Super Green Arugula and pea salad recipe

Ingredients:

4 cups arugula

1/2 cup frozen or fresh peas

3 tbsp sunflower seeds

1 celery stalk

2 tbsp olive oil

Wash arugula and place in serving bowl or bowls. Steam peas for about 3 minutes using a steamer basket over about 1-2 inches of water. Wash and slice celery into 1 cm pieces. Sprinkle steamed peas, celery slices, sunflower seeds over arugula. Drizzle with olive oil and sprinkle a dash of sea salt and freshly ground pepper to taste. Enjoy!!

Makes 2 side salad portions

Prep & make time:

Prep time ~ 10 minutes

Cooking time ~ 3 minutes

Total time ~ 13 minutes

Part of the legume family, beautifully green peas are slightly sweet and provide a good source of protein, potassium, iron and B vitamins. Peas are an excellent addition to a meal to boost its protein content, especially for those eating a vegan based diet.
