Beautifully green and deliciously satisfying, this salad is a perfect light meal or side dish!

Ingredients:
4 cups arugula
1/2 cup frozen or fresh peas
3 tbsp sunflower seeds
1 celery stalk
2 tbsp olive oil
Wash arugula and place in serving bowl or bowls. Steam peas for about 3 minutes using a steamer basket over about 1-2 inches of water. Wash and slice celery into 1 cm pieces. Sprinkle steamed peas, celery slices, sunflower seeds over arugula. Drizzle with olive oil and sprinkle a dash of sea salt and freshly ground pepper to taste. Enjoy!!
