Super Seedy Bread

Looking for a hearty, delicious and nutritious bread thats super easy to make? Look no further : )


~Vegan~



Ingredients:


1 1/4 cup warm water

1 tbsp honey

1 tbsp dry yeast


Spelt flour 1 1/4 cup plus 1/4 for kneeling (if needed)

Rye flour 1 cup

Teff flour 1/4 cup

Wheat bran 1/2 cup

1/4 tsp salt


Ground flax 3 tbsp

Chia seeds 2 tbsp

Sesame seeds 2 tbsp

Poppy seeds 2 tbsp

Sunflower seeds 1/2 cup

Pumpkin seeds 1/2 cup


2 tsp molasses

3 tbsp olive oil


In a small bowl add first 3 ingredients and mix until honey has melted. Set aside.


In a medium bowl add all flours, wheat bran and salt. If you don't have teff flour you can substitute it for more rye or spelt flour. Mix until well combined. Then add all seeds and mix again until well combined. Push aside dry mixture to make a whole in the centre of the bowl. Add the wet mixture, molasses and olive oil and with a wooden spoon slowly stir together, and then fold in dry mixture. Once mostly combined, use your hands to kneed the dough to thoroughly combine the dry and wet ingredients. Do this for about 1 minute. Don't over kneed. Dough should be slightly sticky but should easily form into an oval loaf shape. If it's too sticky, kneed in 2-3 tablespoons of extra spelt flour or rye flour. Form dough into an oval shape that will fit into a 4inch x 10inch x2.5 inch loaf tin. Line tin with parchment paper. Place shaped dough in tin. Press and spread dough into tin so dough spreads evenly into tin.


Let rise for 1.5-2hrs, cover with a tea towel in a warm spot.


Set oven to 375F. You can place the loaf tin on your stove over your oven while it heats up.


Bake for 30-35mins.

Remove from oven and let sit for 10 minutes, then remove from tin and allow to cool on cooling rack. Enjoy!


Stores for 3-5 days outside of fridge in paper bag wrapped in a plastic bag to preserve moisture. Store in fridge in paper bag wrapped in plastic bag to extend life of bread. Bread will last in fridge for at least 7-10 days, unless you eat it all first!

Total time: 1 hr
