Shockingly amazing vegan 'ice cream' that is so easy to make!! You don't need a fancy ice cream maker for this super simple recipe! Just a powerful blender : )
~ Vegan & Gluten-Free ~
Ingredients:
1 can organic coconut cream
1/2 avocado, skin removed
12 dates
2 tbsp sunflower seed butter
1 tsp vanilla
1 tbsp pure peppermint extract
12 fresh mint leaves
Add all ingredients into a high power blender and blend on high until smooth, light and fluffy (about 3-4 minutes). You may need to stop to scrap down the sides once or twice. Pour into 500ml glass jars (filling jars only 3/4 full) and freeze for minimum of 5-24 hours. "Ice cream" will become thicker and more firm the longer you leave it in the freezer. Keep in freezer for up to 2 months (if it lasts that long! )
