Ever made your own sushi? It's actually quite easy to make! I find it fun to create different colourful and tasty vegan creations using a variety of veggies and fruit!

Ingredients:
2 cups sushi rice
4 cups water
5-6 nori sheets
1 tbsp rice vinegar
1 medium carrot, peeled and julienned
1 avocado, thinly sliced
1/4 cup red cabbage, thinly sliced
1/4 red pepper, julienned
1/2 mango, peeled and thinly sliced
1/2 small yam, peeled and julienned
1 green onion, chopped
1/4 cucumber, thinly sliced
soy sauce (optional)
pickled ginger (optional)
wasabi (optional)
Cook rice. In a medium bowl add cooked rice and 1 tbsp of rice vinegar and mix well. Set aside and allow the rice to cool. Prepare veggies and fruit and set aside. Using a sushi rolling mat place nori wrap on mat and place about 3/4 cup of cooked rice on nori wrap. In a small bowl pour 1 cup of water to use for dipping fingers. With wet fingers, press down rice to cover to edges about 3/4 of nori leaving on end free of rice. Lay out desired veggie and fruit combination evenly lengthwise along top 1/4 or pressed rice. Have veggies side of nori closest to you, place thumbs on under side of sushi matt and use fingers to keep veggies tight to rice while beginning to roll. While slowly rolling up mat keep even and firm pressure with thumbs to lightly compress contents. Once rolled up to the end of the rice, holding roll with one hand, dip free hand fingers in water and wet exposed edge of nori evenly. Finish off roll and lightly wipe wet nori edge on roll to create attachment. Set aside and repeat until all rice has been used for rolls. To cut rolls into pieces wet a sharp knife with water and carefully slice into 1 inch pieces. Serve with soy sauce, pickled ginger and wasabi if desired. Enjoy!!
